Okay so I think I'm gonna start saving up for a new drum-kit
Upgrading from my 1st kit - A low-end "pulse" kit - which I dont mind having a pulse I just feel like upgrading
So I was thinking
I'm probably gonna go for a 5-piece Yamaha Stage Custom shell pack or maybe the full kit with the hardware
I've heard really good things about it and it's not overly expensive either
So opinions?
Or maybe another suggestion under $1000USD?

Stage Customs are good, but if you want one thats even better, go for the Ddrum Duo Fade Maple drum set. It's a 6 piece drum shell pack, so it doesn't come with hardware. But it is an amazing drum set.

You should look at the Tama Superstar hyperdrives, they keep the bass free and the rack toms come with cymbal stand clamps and are rim mounted. really good quality, unfortunately the standard depth superstars use the kick drum, but still worth a look. the hardware is exceptional too.

I'm going to advise Pearl all the way. I got a new set about december time, Pearl Vision VBX, and I'm blown away by how good it is. I got the concord fade colour which is kinda like dark blue to black fade, and it came with black hardware too, which I love :D. I'd put up some pictures but my kit's in a REALLY awkward place at the moment, so i can't even get any good pics. My friend bought a stage custom kit this week, i went to play on it yesterday, and it sounds good, as you'd expect from Yamaha, but I prefer Pearl by far, maybe it's just because it's my own set I don't know, but it just seems so much better quality, and the bass is like the best sounding bass I've ever heard too haha, without stuffing it full of crap either, all natural. I'd say definitely take a look at Pearl before you make a decision, I'm really happy with mine 8-) (Also, I'm not sure if the offer's still on any more, but when i got mine, you got a free 10" tom with the kit :) )It was about £700, which is probably about $850 too, so not too expensive either :D

This. Definitely. Call me biased because I'm a proud Pearl Vision (VX) owner, but from the other stuff I've tried - at friend's places, at school, at the music store, the Pearl line called out to me. And under $1000, I'd say these guys are the way to go.

And yeah, @ what Jay said, the free 10" Vision tom is still available. It will continue to be available - it's their way of promoting Pearl's Vision lineup. I got mine in late 2008, the offer started mid-2009, so I missed out. Boo. :( Still worth it nonetheless.
I'm not sure if it comes with upgraded heads where you live, but at my music store, the Pearl Vision kits now come with the 10" tom, mounting hardware for it, AND the tom doesn't have stock pearl heads - it has double ply heads! (The red Pearl Protone logo, MUCH better than the stock black Pearl Protone economy-class heads).

Definitely the way to go, imo. :)
